Macaroni and three cheese
Preheat oven to 200C. Melt a knob of butter in a saucepan and fry 200g of chopped bacon until cooked. Remove the bacon and place on kitchen paper. Add another knob of butter to the pan, fry one finely chopped garlic and stir in 50g of plain flour. Add 800ml of full fat milk slowly, stirring constantly over a medium heat. The sauce should thicken and then add two pinches of ground nutmeg and a tablespoon of wholegrain mustard.
Add 160g of grated hard cheese and 150g of diced mozzarella. Stir in 350g of cooked macaroni and the bacon. Add the mixture to a deep ovenproof dish and layer the top with six thinly sliced tomatoes. Sprinkle over 50g of parmesan, a few pinches of oregano and a drizzle of olive oil. Bake for 40 minutes and then serve with salad.
