Coconut and lime chicken
Preheat oven to 200C. Cut three chicken breasts into strips and place in a bowl. Add one teaspoon of mild curry powder, a pinch of paprika and the zest and juice of one lime. Mix together and then add 50ml of creamed coconut. Stir and season then lay the pieces on a rack on a roasting tin. Bake for 25 minutes (turning over half way through). Serve with rice and mango chutney.
