When I wake up early I never feel like having breakfast. Fortunately this also makes for a very nice ‘after-work’ snack too.
Smoked salmon and scrambled egg on toast
Toast and butter four slices of French bread. Top with 100g of smoked salmon. Break four eggs into a bowl and add two tablespoons of single cream, then whisk.
Heat a knob of butter in a pan. Add the egg mixture and leave it to set for 30 seconds. Then stir with a spoon until cooked. Stir in another tablespoon of cream and a bit more butter. Then put on top of the toast and serve.
