Thai Crab Cakes

Serves 2

  • 200g can white crab meat, drained
  • 1 egg white, beaten
  • 1dsp Thai red curry paste
  • 1dsp fish sauce
  • Grated rind from half a lime

Put crab meat, egg white, curry paste, fish sauce and zest in a bowl and blend with a hand blender or put in a food processor. Season and roll into four balls. Cover and chill in fridge for 30 minutes. Heat some oil in a frying pan. Flatten the balls and fry for 3-4 minutes on both sides. Serve with sweet chilli sauce as a starter.
