Yesterday I couldn’t post a photo because I was keeping this ‘Mother’s Day muffin’ a secret from my mum.
She found it anyway and ate one. Good job I made more.
Preheat oven to 200C. Line muffin tin with 12 cases. Sift 280g plain flour, 1tbsp baking powder and a pinch of salt into a large bowl and then mix in 115g caster sugar.
Beat 2 eggs in a jug and then beat in 250ml milk, 6tbsp sunflower oil and 1tsp of orange zest. Make a well in the dry ingredients and add liquid ingredients. Don’t over mix. Spoon into cases.
Bake for 20 minutes then leave to cool. Whilst warm they can be served with ice cream according to my mum.
