Cupcake heaven but they’re actually called Devil’s cupcakes. I am very proud of these beauties.
Preheat oven to 180C and line two muffin tins with 20 cases. Whisk 175g boiling water with 50g cocoa powder and then leave to cool. Then whisk in two eggs and 1tsp vanilla extract.
Electrically whisk 175g plain flour, 1/2tsp salt, 1/2tsp bicarbonate of soda and 225g caster sugar until combined and then add one third of cocoa mixture and 175g butter. Mix on medium speed for one minute and then add the rest of mixture in three batches, whisking for 30 seconds after each time. Fill cases and bake for 20 minutes.
Beat 4tbsp butter and 200g cream cheese together and then add 1tsp vanilla. Then add 400g icing sugar in four batches, mixing all the time. Chill for two hours then top the cupcakes.
