Here’s me enjoying some of my homemade roasted sweet potato soup. Soup is the easiest thing to make. Pretty much anything can be made into a soup which is why I ate so much of it during my time as a student.
Roast 450g sweet potato (peeled and chunked), 3 shallots (peeled and quartered), 2 garlic cloves (peeled), half a carrot (peeled and chunked) in a 200C oven for 40 minutes, after you’ve poured over 1dsp harissa paste and 1dsp olive oil.
Add 1/2 hot veg stock and 1/2tsp honey and scrap the bits off the bottom of the tin. Blend and then pour into a saucepan to reheat. Add a squeeze of lemon juice and season. Mix natural yogurt with a little harissa and top each bowl before serving.
