Today I decided to be inventive for dinner. I made Moroccan chicken and rice from scratch. I know it’s supposed to be with couscous but we were all out.
Fry 4 chicken breasts with 1tsp of olive oil and drizzle 1tbsp of honey over the top. Wait until browned and then add 1tsp of cinnamon, 1tsp of cumin, 400g can of chopped tomatoes, 150ml of chicken stock, 200g of green beans and a squeeze of lemon juice. Stir, bring to boil and simmer for 10 minutes. Then serve. I added fried mushrooms on the side because we had some that needed using up. Waste not.
